Organic Amfissis Green Olives with Red Peppers

*Green “Amfissis” variety olives are an excellent quality Greek table olive grown in Amfissa, Central Greece near the oracle of Delphi. Amfissa olives enjoy protected designation of origin (PDO) status.
The consumption of Amfissis table olives is considered to offer a high intake of antioxidants, mainly polyphenols and so a health benefit for the prevention of many decadent diseases.
The olives from Amfissa are amongst the most sought after table olives in Greece. They are of medium size to large, with 2-3cm length and 2-2.5cm width.
Its core is small, taking approx. 15% of the whole fruit volume. Amfissis olives are cultivated almost exclusively in central Greece but they can be found in other areas as well.
The shape of the olive is round to oval and the flesh is solid but relatively deficient in fat and fermentable ingredients.
The olive skin is thin and flexible and it gradually changes color from green to rose, violet red, purple and finally black in ripening.
It ripens from mid-November to the end of December. When the fruit is intended for the production of green olives, the collection takes place about 2 months earlier.
In regard to the cultivation, the tree grows at an altitude of up to 600 meters. It is relatively resistant to cold, leaf spot and its weak point is the sensitivity to Verticillium.
The Amfissis olive tree is considered as highly productive and does not need much watering during the year.
