Santorini Fava PDO - Yellow Split Peas


Santorini Fava P.D.O. is a "Protected Designation of Origin" product that comes from the plant "Lathyrus Chymenum L" that grows exclusively in Santorini since ancient times!
Fava beans originate in Ancient Greece and have grown exclusively in Santorini for more than 3500 years. Santorini Fava is a legume from the plant “Lathyrus Clymenum L” and is considered a superfood with more than 20% plant-based protein. The production of fava is very small due to the availability of land and growing conditions on the island which makes fava a true delicacy. Santorini’s production does not exceed 450 pounds per annum.
Fava (split peas) from Santorini has a rich and velvety texture with an earthy and slightly sweet taste, making them a treasured ingredient with chefs around the globe. Fava can be savored as an appetizer, main dish, or side dish and pairs beautifully with meat, seafood, or vegetables.
"Santorini Fava" has very high nutritional value, as it is rich in proteins and carbohydrates. The traditional method of production, which includes drying under the sun and aging, results in its velvety texture and slightly sweet taste.
Santorini Fava beans are known for their relatively small size, which yields an incredible amount of nutrients. In particular, they’re rich in plant protein, folate, and several other vitamins and minerals. They’re also loaded with soluble fiber that can aid digestion and lower cholesterol levels.
Fava beans are also rich in levodopa (L-dopa), a compound that your body converts to the neurotransmitter dopamine, known to fight neuro-generative diseases. Are also beneficial for bone health and aid in lowering cholesterol and high blood pressure.

Fava Recipe (2-3 servings):
Add 4 cups of water in a saucepan, then add 1 cup of Fava beans, salt, pepper and a whole peeled onion. After water starts boiling, remove the foam and simmer for 3-35 mins over medium heat and until Fava beans become a velvet mixture. Serve the Fava puree' in a bowl and add Olive Oil, Santorini capers and onion and enjoy a delicious and ultra-healthy appetizer!
Fava with Tomato Sauce:
Slightly sautee a sliced onion and a sliced tomato in Olive oil. Then add the cooked Fava beans, salt, pepper and stir until the mixture becomes thick. Enjoy a delicious and superfood sauce :-)
